This version of chicken and bean burritos is actually more slimming than Chipotle's, weighing in at 45% less calories! It can be made with your favorite salsa, or, for a slimming bonus, choose a salsa that's extra spicy – hot peppers rev metabolism!
Ingredients:
- 1 pkg (8 oz.) Mexican rice-and-bean mix
- 3/4 c prepared salsa
- 1 lb boneless chicken breast, shredded
- 1 c shredded pepper-Jack cheese (for non-dairy version, use Daiya cheese)
- 8 burrito-size corn tortillas
Directions:
1. Prepare rice-and-bean mix according to package directions. Stir in salsa, chicken and cheese. Divide mixture among tortillas. Fold and roll tortillas to enclose filling.
2. In skillet coated with cooking spray over medium heat, cook burritos 4 minutes or until browned, turning once. Serve with guacamole and additional salsa, if desired.
