{"id":6894,"date":"2013-12-11T12:05:09","date_gmt":"2013-12-11T17:05:09","guid":{"rendered":"http:\/\/angelaminelli.com\/blog\/?p=6894"},"modified":"2022-08-25T22:24:51","modified_gmt":"2022-08-26T03:24:51","slug":"sugarfree-glutenfree-sugar-cookies","status":"publish","type":"post","link":"http:\/\/angelaminelli.com\/blog\/sugarfree-glutenfree-sugar-cookies\/","title":{"rendered":"Sugar-Free Gluten-Free Sugar Cookies"},"content":{"rendered":"<p>\n\t<img decoding=\"async\" alt=\"Christmas cookies\" class=\"alignleft size-thumbnail wp-image-6895\" height=\"150\" src=\"http:\/\/angelaminelli.com\/blog\/wp-content\/uploads\/2013\/12\/sugar-cookies-150x150.jpg\" width=\"150\" \/>A frosted, cakey SFGF&nbsp;cut-out sugar cookie made with agave.&nbsp; A guaranteed hit for a holiday cookie exchange, or anytime!\n<\/p>\n<p>\n\t<strong><u>Dough:<\/u><\/strong>\n<\/p>\n<ul>\n<li>\n\t\t1 c vegetable shortening\n\t<\/li>\n<li>\n\t\t1\/2 c Swerve sugar alternative\n\t<\/li>\n<li>\n\t\t2 eggs\n\t<\/li>\n<li>\n\t\t1 tbsp vanilla\n\t<\/li>\n<li>\n\t\t1 c sour cream\n\t<\/li>\n<li>\n\t\t1\/2 c light agave\n\t<\/li>\n<li>\n\t\t2 droppers liquid Stevia vanilla creme\n\t<\/li>\n<li>\n\t\t3 c gluten-free flour\n\t<\/li>\n<li>\n\t\t1 c white rice flour\n\t<\/li>\n<li>\n\t\t1 c potato flour\n\t<\/li>\n<li>\n\t\t4 packets or 2 tsp Stevia Plus Powder\n\t<\/li>\n<li>\n\t\t2 tsp baking powder\n\t<\/li>\n<li>\n\t\t1 tsp baking soda\n\t<\/li>\n<li>\n\t\t1 tsp xantham gum\n\t<\/li>\n<li>\n\t\t<u><strong>Icing:<\/strong><\/u><strong>&nbsp;<\/strong>\n\t<\/li>\n<li>\n\t\t1 c Swerve sugar alternative, powdered\n\t<\/li>\n<li>\n\t\t2 tsp unsweetened almond milk\n\t<\/li>\n<li>\n\t\t1 dropper liquid Stevia vanilla creme\n\t<\/li>\n<li>\n\t\t2 tsp light agave\n\t<\/li>\n<li>\n\t\t2 tsp beet, strawberry, spinach baking powder\n\t<\/li>\n<\/ul>\n<p>\n\t<br \/>\n\t<strong>For cookies: &nbsp;<\/strong>With paddle attachment in stand up mixer, cream shortening and Swerve. &nbsp;Add in eggs and beat until fluffy. &nbsp;Add in vanilla, sour cream, agave, and liquid Stevia and blend.&nbsp;&nbsp;\n<\/p>\n<p>\n\tIn separate bowl, sift together gluten-free flour, white rice flour, potato flour, Stevia powder, baking powder, baking soda, and xantham gum.\n<\/p>\n<p>\n\tWith paddle attachment in stand up mixer, add pre-sifted dry ingredients to wet ingredients and mix. &nbsp;Scrape down sides of bowl. &nbsp;If needed, add a bit of flour to hands first and then form dough int a ball. &nbsp;Wrap in plastic. &nbsp;Refrigerate 2 hours or overnight for best results to firm up dough.\n<\/p>\n<p>\n\tBetween 2 floured sheets of wax paper, roll out dough to about 1\/4&quot; thick. &nbsp;Peel the top layer of was paper off dough. &nbsp;Cut out cookies with floured cookie cutters and place on ungreased cookie sheet. &nbsp;This dough is very durable and can be rolled out many times. &nbsp;\n<\/p>\n<p>\n\tBake at 350 degrees for 6-8 minutes. &nbsp;Depending on how thick or thin you roll the dough will depend on how long you bake the cookies.
