{"id":5966,"date":"2013-08-18T06:00:34","date_gmt":"2013-08-18T10:00:34","guid":{"rendered":"http:\/\/angelaminelli.com\/blog\/?p=5966"},"modified":"2022-08-25T22:24:53","modified_gmt":"2022-08-26T03:24:53","slug":"zucchinikale-pancakes","status":"publish","type":"post","link":"http:\/\/angelaminelli.com\/blog\/zucchinikale-pancakes\/","title":{"rendered":"Zucchini-Kale Pancakes"},"content":{"rendered":"<p>\n\t<img decoding=\"async\" alt=\"\" class=\"alignleft size-thumbnail wp-image-5967\" height=\"150\" src=\"http:\/\/angelaminelli.com\/blog\/wp-content\/uploads\/2013\/08\/zucchini-kale-pancakes-150x150.jpg\" width=\"150\" \/>Pancakes are one of my favorite foods. &nbsp;Mixed with zucchini, kale and onions makes them even better!\n<\/p>\n<p>\n\tThis recipe for Zucchini-Kale Pancakes comes from Vicki Hamm of my local CSA. &nbsp;Eat them anytime!\n<\/p>\n<p>\n\t<strong>Ingredients:<\/strong>\n<\/p>\n<ul>\n<li>\n\t\t1 bunch kale\n\t<\/li>\n<li>\n\t\t3 small onions or 1 large\n\t<\/li>\n<li>\n\t\t2 medium zucchini\n\t<\/li>\n<li>\n\t\t2 large cloves garlic\n\t<\/li>\n<li>\n\t\t2-4 eggs\n\t<\/li>\n<li>\n\t\t1\/2 tsp dried thyme\n\t<\/li>\n<li>\n\t\t1\/4 to 1\/2 c flour (optional&nbsp;but recommended)\n\t<\/li>\n<li>\n\t\tFeta or vegan cheese\n\t<\/li>\n<\/ul>\n<p>\n\t<strong>Directions:<\/strong>\n<\/p>\n<p>\n\tChop onions and saute in butter on medium-low heat for 10 minutes until carmelized. &nbsp;<span style=\"line-height: 1.6em;\">Put 1\/2&quot; of water in a pan with a dash of salt. &nbsp;Turn heat to high. &nbsp;Tear&nbsp;leaves off kale and add to water. &nbsp;Cover pan and lower temp to medium when water starts to boil. &nbsp;Cook as long or short as you&#39;d like, between 0-20 minutes. &nbsp;Drain water.
