{"id":5911,"date":"2013-08-12T13:21:11","date_gmt":"2013-08-12T17:21:11","guid":{"rendered":"http:\/\/angelaminelli.com\/blog\/?p=5911"},"modified":"2022-08-25T22:24:53","modified_gmt":"2022-08-26T03:24:53","slug":"kale-raisins-toasted-pine-nuts","status":"publish","type":"post","link":"http:\/\/angelaminelli.com\/blog\/kale-raisins-toasted-pine-nuts\/","title":{"rendered":"Kale With Raisins and Toasted Pine Nuts"},"content":{"rendered":"<p>\n\t<img decoding=\"async\" alt=\"Organic kale\" class=\"alignleft size-thumbnail wp-image-5912\" height=\"150\" src=\"http:\/\/angelaminelli.com\/blog\/wp-content\/uploads\/2013\/08\/Eat-more-kale-150x150.jpg\" width=\"150\" \/>Sauteing the raisins briefly gives them a glossy look and carmelized taste. &nbsp;Combined with the&nbsp;nutty flavor and soft texture of the pine nuts, this dish is a hit every time it&#39;s served! &nbsp;It tastes delicious over pasta too.\n<\/p>\n<ul>\n<li>\n\t\t1\/4 cup toasted pine nuts\n\t<\/li>\n<li>\n\t\t3\/4 lb kale (about 6 cups chopped)\n\t<\/li>\n<li>\n\t\t2 cups water\n\t<\/li>\n<li>\n\t\t2 tsp Extra Virgin Olive Oil\n\t<\/li>\n<li>\n\t\t2 garlic cloves, minced\n\t<\/li>\n<li>\n\t\t1\/3 cup raisins\n\t<\/li>\n<li>\n\t\tsalt to taste\n\t<\/li>\n<\/ul>\n<p>\n\t1. To toast pine nuts, place them on a pie tin or cookie sheet and bake at 325 degress for 5 minutes, or until golden brown. &nbsp;Take care not to burn the nuts. &nbsp;Set aside.\n<\/p>\n<p>\n\t2. Wash kale and strip the leaves off the stalks. &nbsp;Discards stalks and roughly chop. &nbsp;Bring the water to a boil in a 10-12-inch skillet that has a tight-fitting lid. &nbsp;Add the kale and cook, covered, over high heat, stirring occassionally, until tender, approximately 5 minutes. &nbsp;Remove and drain, saving the cooking liquid to drink.\n<\/p>\n<p>\n\t3. Rinse out and dry the skillet, then use it to heat the olive oil over medium heat, lifting and tilting the pan to coat. &nbsp;Add garlic and saute for 15 seconds. &nbsp;Add raisins and saute for 30 seconds to 1 minute, stirring contantly to prevent browning or burning. &nbsp;Raisins should be glossy and slightly puffed.\n<\/p>\n<p>\n\t4.
